Mystery Pie

Recipe Compliments of Karen Ehrman, a long-time RMHC Hawaii volunteer, whose pies have been a favorite in the RMHC’s house.

Ingredients:

Mystery Pie

  • 3 egg whites
  • 1/2 teaspoon baking powder
  • 1 cup sugar
  • 20 salted crackers (such as Ritz), crumbled
  • 1 cup chopped pecans (may substitute with your favorite nut)
  • 1 cup of your favorite jam

Directions:

  1. Preheat oven to 350°F.
  2. Using an electric mixer, beat egg whites slightly.
  3. Sprinkle baking powder over egg whites and mix, then gradually add sugar, beating until stiff peaks are formed.
  4. Fold in cracker crumbs and nuts with a rubber scraper.
  5. Pour mixture into a 9'' pie pan.
  6. Bake for 30 minutes.
  7. Once cooled, top pie with jam.
  8. Refrigerate overnight.

Makes 8 servings.
