Nice and Light Split Pea Soup

Ingredients:

Nice and Light Split Pea Soup

  • 3 cups water
  • 1 cup split green peas, rinsed and sorted
  • 4 cups vegetable stock
  • 1 teaspoon dried onion flakes
  • 1 bay leaf
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon dried parsley
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon garlic powder

Directions:

  1. In a large saucepot, bring water to a boil.
  2. Add peas and bring again to a boil.
  3. Reduce heat and simmer for 20 minutes.
  4. Add remaining ingredients; bring to a boil.
  5. Reduce heat and simmer for 20 more minutes.
  6. Remove bay leaf before serving.

Make 4 servings.
