No-Cheese Cheesecake

Ingredients:

No-Cheese Cheesecake

  • 1 lb firm tofu, well drained
  • 1 large ripe banana, peeled and sliced
  • 5 large egg whites
  • 3 tablespoons corn syrup
  • 1 tablespoon lemon juice
  • 1/8 teaspoon grated lemon rind
  • 1 can (6 oz) crushed pineapple, well drained*
  • 1 cup canned blueberry pie filling*
  • 1/4 cup chopped macadamia nuts

Directions:

  1. Preheat electric oven to 300°F.
  2. To a blender, add tofu and banana; blend until smooth.
  3. Place tofu mixture in large bowl of electric mixer.
  4. Add egg whites and mix on low speed.
  5. Add corn syrup, lemon juice, rind, and pineapple; continue mixing until just blended.
  6. Pour into a 9-inch non-stick baking pan and place pan in a 13 x 9 x 2-inch pan filled with water to a depth of 1/2 inch.
  7. Bake for 45 minutes.
  8. Chill several hours or overnight before serving.
  9. To serve, top with blueberry pie filling and nuts.

Makes 12 servings.
