Oatmeal Bites

Ingredients:

Oatmeal Bites

  • 2 cups old-fashioned oatmeal
  • 1 cup smooth peanut butter
  • 2 tablespoons unsweetened cocoa powder
  • 1 cup mashed ripe banana (about 2 medium bananas)
  • 1 teaspoon baking soda
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon kosher salt

Directions:

  1. Pre-heat oven to 350°F; line two baking sheets with parchment paper; set aside.
  2. In a medium bowl, stir together all ingredients until well combined.
  3. Scoop dough in rounded tablespoons onto prepared sheets about 1 inch apart.
  4. Bake 7-10 minutes or until they are firm.

Makes 40 mini cookies.
