Oatmeal Jam Bars with Macadamia Nuts

Ingredients:

Oatmeal Jam Bars with Macadamia Nuts

  • 2 cups quick rolled oats
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup chopped macadamia nut (may substitute with walnuts or pecans)
  • 1/2 cup brown sugar, packed.
  • 3/4 cup melted butter or margarine 1 (8 ounce) jar of your favorite local jelly or jam, such as lilikoi jelly or strawberry-guava jam

Directions:

  1. Preheat oven to 350°F.
  2. Spray a 9" square baking pan with cooking spray.
  3. In a large bowl, combine all ingredients, except jam/jelly, and mix well.
  4. Set aside 1 cup of mixture.
  5. Spread the rest in the bottom of baking pan and press down well.
  6. Bake 10 minutes.
  7. Stir jam/jelly in jar to make it easily spreadable.
  8. Spread over oat mixture to within 1/4" of the sides of the pan.
  9. Sprinkle remaining oat mixture evenly over the top and press down lightly.
  10. Bake for 20 minutes or until top is golden brown.
  11. Cool in pan.
  12. Cut into bars.

Makes 12 servings.

Note: Recipes can be doubled and made in a 9x13-inch pan. Mix and match your favorite nuts and jelly or jam.
