Oatmeal Raisin Cookies

Ingredients:

Oatmeal Raisin Cookies

  • 9 tablespoons unsweetened applesauce
  • 3/4 cup raw sugar
  • 1/3 cup pure maple syrup
  • 1 medium (about 7 inches) slightly ripe banana, mashed
  • 3 tablespoons non-dairy milk (may substitute with plain soy or almond milk)
  • 1/3 teaspoon vanilla
  • 2 1/4 cups rolled oats
  • 1/3 cup whole wheat pastry flour
  • 1/3 teaspoon baking soda
  • A few dashes of ground cinnamon
  • 1/3 cup raisins

Directions:

  1. Preheat oven to 350°F.
  2. Line cookie sheets with parchment paper.
  3. In a medium bowl, mix applesauce, sugar, maple syrup, banana, non-dairy milk, and vanilla.
  4. In a large bowl, mix oats, flour, baking soda, and cinnamon.
  5. Pour wet mixture into dry mixture and add raisins.
  6. Gently stir until just combined.
  7. Form dough into 20 balls and place on sheet.
  8. Flatten with palm and leave at least 1/2 inch between cookies.
  9. Bake for 10-15 minutes, until springy to the touch and golden brown.
  10. Let cool.

Makes 20 cookies.
