Olive Oil Granola

Ingredients:

Olive Oil Granola

  • 3 cups rolled oats
  • 1 cup walnut pieces
  • 1 cup almonds, unsalted
  • 1 tablespoon flax seeds
  • 1 cup unsweetened coconut flakes
  • 1/2 cup olive oil
  • 1/2 cup agave nectar
  • 1/2 cup packed brown sugar
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cardamom
  • 3/4 cup raisins
  • 1/2 cup dried mango, chopped

Directions:

  1. Preheat oven to 300°F.
  2. Mix all ingredients except raisins and mangos in a large bowl.
  3. Lightly grease a large baking sheet with olive oil or cooking spray.
  4. Evenly pour mixture on pan and bake for 45 minutes or until golden brown, stirring every 10 minutes.
  5. Remove from oven and cool; stir in raisins and mangoes.

Makes about 10 cups.
