Onolicious Local Ground Beef Stir Fry

Ingredients:

Onolicious Local Ground Beef Stir Fry

  • 2 teaspoon vegetable oil, divided
  • 1 pound local ground beef, available at specialty stores
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1/2 onion, sliced
  • 5 fresh baby portabella mushrooms, sliced (may substitute with fresh shiitake)
  • 2 tablespoons brown sugar
  • 2 tablespoons low-sodium shoyu
  • 1 block firm tofu, drained and cut into bite-size cubes
  • 2 stalks green onion, sliced into 1-inch pieces

Directions:

  1. In a pan, heat 1 teaspoon oil over medium-high.
  2. Add ground beef and season with salt and pepper.
  3. When cooked drain excess oil and remove beef from pan.
  4. Add remaining oil, garlic, onions, and mushrooms to pan.
  5. Season with salt and pepper and stir fry for 2 minutes.
  6. Return beef to pan and add sugar and shoyu; cook for another 2 minutes.
  7. Add tofu and remove from heat; garnish with green onions.
  8. Enjoy in a lettuce wrap, over soba noodles, or rice.
