Orange And Olive Salad

Ingredients:

Orange And Olive Salad

  • 5 cups orange sections
  • 1 cup thinly sliced green bell pepper
  • 4 large ripe olives, sliced thinly
  • 2 tablespoons chopped fresh mint leaves
  • 2 teaspoons olive oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground coriander
  • 1 teaspoon raw sugar
  • 1/4 teaspoon salt
  • Pinch of red pepper flakes to taste (optional)

Directions:

  1. Remove seeds from oranges; reserve juice.
  2. In a bowl, combine oranges, the reserved orange juice, and remaining ingredients; toss gently.
  3. Refrigerate until ready to serve.

Makes 4 servings.
