- Heat oven to 350°F.
- Coat muffin pan with cooking spray.
- In a large bowl, stir together bananas, coconut oil, honey, eggs, and vanilla until combined.
- Mix in flour, baking soda, spices, and salt, until just combined.
- Fold in chocolate chunks.
- Fill muffin pan and bake for 20 to 22 minutes or until a toothpick inserted into center comes out clean.
