Banana Cornmeal Cake

Ingredients:

Banana Cornmeal Cake

  • 1/2 cup milk
  • 1 cup margarine, melted
  • 1/2 cup butter, melted
  • 4 eggs, beaten
  • 2 cups mashed bananas
  • 2 teaspoons lemon juice
  • 4 cups all purpose baking mix (such as Bisquick)
  • 1/4 cup yellow cornmeal
  • 2 cups sugar
  • 1/2 teaspoon baking soda

Directions:

  1. Preheat oven to 350°F.
  2. Grease a 13 x 9 x 2-inch baking pan.
  3. In a large bowl, combine milk, margarine, butter and eggs.
  4. Add bananas and lemon juice.
  5. In another bowl, combine buttermilk baking mix, cornmeal, sugar, and baking soda; stir into banana mixture.
  6. Pour batter into prepared pan.
  7. Bake for 35 minutes or until a wooden pick inserted in center comes out clean.

Makes 24 servings.
