Butterfinger Bars

Ingredients:

Butterfinger Bars

  • 4 cups rolled oats
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 cup (2 sticks) butter, melted
  • 1 cup milk chocolate chips
  • 3/4 cup peanut butter

Directions:

  1. Preheat oven to 350°F.
  2. Grease a 13 x 9 x 2 inch baking pan.
  3. In a medium-size bowl, mix together the oats and the sugars.
  4. Stir in the melted butter until well mixed.
  5. Spread the mixture evenly into the bottom of prepared pan.
  6. Bake for 15 minutes or until golden brown.
  7. Melt the chocolate with the peanut butter (see note), stirring occasionally until smooth; spread over the baked crust.
  8. Cool before cutting into bars.

Makes 36 bars.

Note: To melt chocolate in a microwave oven, place chocolate into a microwave-safe bowl and place the bowl in the microwave oven for 2 1/2 minutes at 50% power. The chocolate might not appear to be melted, but check by stirring with a rubber spatula. If after stirring, there are un-melted bits remaining, microwave it again at 50% power for 5 to 10 second intervals, stirring after each interval.
