Cajun Crusted Ahi with Mango and Dragon Fruit Salsa

Ingredients:

Cajun Crusted Ahi with Mango and Dragon Fruit Salsa

Salsa:

  • 1 large ripe mango, peeled and diced
  • 1 medium dragon fruit, peeled and diced
  • 1/2 red onion, diced
  • 2 tablespoons chopped fresh Chinese parsley
  • Zest and juice of 1 lime
  • 1 tablespoon rice wine vinegar
  • Pinch of salt

Fish:

  • 4 (6-ounce) very fresh ahi tuna steaks, 1-inch thick
  • 2 tablespoons spicy cajun seasoning
  • Olive oil or coconut oil

Directions:

Salsa:

  1. Add all ingredients to a bowl, mixing carefully until well combined; set aside.

Fish:

  1. Preheat frying pan for 5 minutes over medium high heat.
  2. Meanwhile, divide cajun seasoning among 4 tuna steaks, coating both sides.
  3. Once pan is hot, add a little oil and swirl pan to coat bottom.
  4. Cook ahi steaks for 2 minutes per side.
  5. To serve, divide salsa atop the ahi steaks, either left whole, or sliced.
  6. Serve with your favorite rice or grain and some steamed fresh vegetables.

Makes 4 servings.
