Calamansi Sorbet

Ingredients:

Calamansi Sorbet

  • 2 cups water, divided
  • 1 cup sugar
  • 2 teaspoons Calamondin zest
  • 1/2 cup freshly squeezed Calamondin juice (about 10-12 Calamondins)

Directions:

  1. In a medium, nonreactive saucepan, mix 1/2 cup water and sugar.
  2. Add zest into saucepan.
  3. Heat, stirring frequently, until sugar is completely dissolved.
  4. Remove from heat and add remaining 1 1/2 cup water, then chill thoroughly in the refrigerator.
  5. Stir the Calamondin juice into the sugar syrup, then freeze mixture in your ice cream maker according to the manufacturer's instructions.

Makes about 3 cups.
