Caramel-Apple Cupcakes

Ingredients:

Caramel-Apple Cupcakes

  • 1 pkg (18 1/4 oz) carrot cake mix
  • 2 cups pared and chopped tart apples
  • 20 pieces caramel candy*
  • 3 tablespoons milk
  • 1 cup chopped pecans
  • 12 flat wooden skewers

Directions:

  1. Preheat electric oven to 350°F.
  2. Grease a 12-cup muffin pan.
  3. Prepare cake mix according to package directions; fold in apples.
  4. Spoon into prepared muffin cups.
  5. Bake for 20 minutes or until done.
  6. Cool.
  7. In a saucepan, combine caramels and milk.
  8. Cook on low heat; stirring until smooth.
  9. Spread over cupcakes.
  10. Sprinkle with pecans.
  11. Insert a wooden stick into the center of each cupcake.

Makes 12 cupcakes.

*If using caramel squares, omit the milk.
