- 2.25 pounds skin-on chicken thighs
Marinade:
- 1/2 cup fresh lime juice
- 3 teaspoon fresh lime zest
- 1/4 cup olive oil
- 4 tablespoon finely chopped fresh Chinese parsley
- 2 jalapenos, finely chopped
- 4 cloves garlic, finely chopped
- 1 tablespoon honey
- 2 teaspoons salt
- 1 teaspoon chili powder or to taste
