Chili-Lime Chicken

Ingredients:

Chili-Lime Chicken

  • 2.25 pounds skin-on chicken thighs

Marinade:

  • 1/2 cup fresh lime juice
  • 3 teaspoon fresh lime zest
  • 1/4 cup olive oil
  • 4 tablespoon finely chopped fresh Chinese parsley
  • 2 jalapenos, finely chopped
  • 4 cloves garlic, finely chopped
  • 1 tablespoon honey
  • 2 teaspoons salt
  • 1 teaspoon chili powder or to taste

Directions:

  1. Preheat oven to 400°F.
  2. Clean chicken, remove bones and pat dry; set aside.
  3. In a large bowl, mix all marinade ingredients using a whisk.
  4. Make sure marinade is well combined.
  5. Add chicken to marinade and coat evenly.
  6. Place chicken in baking pan and bake for 20-25 minutes until skin becomes brown and charred and juices run clear.

Makes 6 servings.
