Chimichurri Strip Steak with Potatoes and Tomatoes

Ingredients:

Chimichurri Strip Steak with Potatoes and Tomatoes

  • 4 (1-inch thick) New York beef strip steaks (2 1/2 pounds total)
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon pepper

Herb sauce:

  • 1 cup packed fresh parsley
  • 1 cup packed fresh cilantro
  • 1 clove garlic
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper
  • 1/8 teaspoon Kosher salt
  • 1/8 teaspoon pepper

Red Potatoes:

  • 1 1/2 pounds small red potatoes, cut into halves
  • 1 tablespoon olive oil
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon pepper

Plum Tomatoes:

  • 6 medium plum tomatoes, cut into halves
  • 1 tablespoon olive oil
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon pepper

Directions:

Herb sauce:

  1. In food processor, pulse parsley, cilantro and garlic until finely chopped.
  2. Add oil, vinegar, oregano, red pepper and 1/8 teaspoon each kosher salt and black pepper; pulse to blend.

Steak:

  1. Heat grill on medium-high.
  2. Fit wire rack into rimmed baking sheet.
  3. Pat steaks dry.
  4. Season with 1/2 teaspoon each kosher salt and pepper.
  5. Grill, turning occasionally, until desired doneness, 7-8 minutes for medium-rare.
  6. Transfer to wire rack.
  7. Let stand 5 minutes.
  8. Stir meat juices into herb sauce.
  9. Slice steak; serve with sauce as well as grilled potatoes and tomatoes.

Meanwhile, make the potatoes:

  1. On large sheet heavy-duty foil, place potatoes, cut into halves; toss with olive oil, salt and pepper.
  2. Fold foil over; crimp edges to seal.
  3. Grill on medium-high until tender, turning over once, 25-30 minutes.

Meanwhile, make the tomatoes:

  1. Cut plum tomatoes into halves.
  2. Brush cut sides lightly with olive oil and sprinkle with salt and pepper.
  3. Grill until lightly charred, 3-5 minutes per side.

Serves 6.
