Chocolate Cheesecake

Ingredients:

Chocolate Cheesecake

  • 10 cinnamon-flavored graham crackers or 1 1/3 cups crumbs
  • 1 1/2 cups sugar
  • 14 tablespoons butter, melted
  • 1/4 cup unsweetened cocoa powder
  • 5 pkg (8 oz size) cream cheese, softened
  • 5 eggs
  • 1 tablespoon vanilla
  • 1/3 cup flour
  • 1 cup sour cream

Directions:

  1. Preheat electric oven to 325°F.
  2. In a food processor or blender, process crackers into fine crumbs.
  3. Combine crumbs and 1/2 cup of the sugar; add 6 tablespoons of the melted butter and mix well.
  4. Evenly press crumb mixture into bottom of a 9-inch spring form pan.
  5. Bake for 10 to 12 minutes; cool thoroughly.
  6. Combine cocoa and the remaining 8 tablespoons melted butter; set aside.
  7. In large bowl of electric mixer, combine cream cheese, eggs, the remaining 1 cup sugar, the vanilla, and flour; mix well.
  8. Add 1 1/2 cups of cream cheese mixture to the reserved cocoa mixture.
  9. Add the sour cream to the remaining cream cheese mixture; pour over cooled crust.
  10. Spoon dollops of cocoa mixture over cream cheese mixture.
  11. Using a knife, swirl cocoa mixture through cream cheese mixture, creating a marble effect.
  12. Bake for 1 hour.
  13. Loosen sides of pan and cool cake thoroughly.
  14. Remove sides of pan and refrigerate cake overnight.

Makes 12 to 16 servings.
