Chocolate Chip Cheesecake

Ingredients:

Chocolate Chip Cheesecake

Crust:

  • About 1 cup chocolate sandwich cookies
  • 2 tablespoons butter, softened

Filling:

  • 16 oz. cream cheese, softened
  • 1 cup sugar
  • 16 oz. sour cream
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 1/2 cups chocolate chips, divided

Directions:

Crust:

  1. Crush cookies into coarse crumbs.
  2. Add butter and mix well.
  3. Press crumb mixture into bottom and slightly up the side of a 9-inch springform pan; refrigerate while preparing filling.

Filling:

  1. Preheat electric oven to 350°F.
  2. In a large bowl, using an electric mixer, beat cream cheese until smooth.
  3. Blend in sugar and sour cream.
  4. Add eggs and vanilla; mix until smooth.
  5. Stir in 1 cup of the chocolate chips.
  6. Pour cream cheese mixture evenly over crust; smooth top.
  7. Sprinkle the remaining 1/2 cup chocolate chips evenly over mixture.
  8. Bake 30 to 40 minutes.
  9. Turn oven off and leave cheesecake in oven for 1 hour.
  10. Remove from oven and chill in refrigerator until firm, about 3 to 4 hours.
