Chocolate Lava Bars

Ingredients:

Chocolate Lava Bars

Crust:

  • Non-stick cooking spray
  • 1 egg, lightly beaten
  • 1/2 cup butter, melted and cooled
  • 1 (18.25 ounce) box chocolate cake mix

Topping:

  • 1 (8-ounce) package cream cheese, softened
  • 2 eggs
  • 1(16-ounce) box powdered sugar
  • 1/2 cup butter, melted and cooled
  • 1/4 cup prepared fudge sauce
  • 2 tablespoon very strong brewed coffee or espresso
  • 1 teaspoon vanilla
  • Powdered sugar (optional, for dusting)

Directions:

Crust:

  1. Preheat oven to 350°F.
  2. Coat 13x9x2-inch baking pan with non-stick cooking spray; set aside.
  3. In a medium bowl, stir together 1 egg and melted butter.
  4. Stir in dry cake mix until combined (may need to mix by hand as mixture will be thick).
  5. Press evenly into the bottom of prepared pan.
  6. Bake 15 minutes.

Topping:

  1. In a large bowl, beat cream cheese with an electric mixer until fluffy.
  2. Add eggs, one at a time, beating on low speed after each addition until combined.
  3. Gradually add powdered sugar, 1 cup at a time, beating on low speed until smooth.
  4. Slowly add melted butter, fudge sauce, coffee and vanilla, continuing to beat on low speed until just combined.
  5. Pour batter over baked crust.
  6. Bake for 35 minutes more (center will not appear to be set).
  7. Cool completely in pan on a wire rack before serving.
  8. Sprinkle with additional powdered sugar if desired.

Makes 24 bars.
