Pie Crust:

- 1 1/2 cups cold unsalted butter, cut into 1/2-inch pieces
- 1/3 cup ice water
Filling:
- 2 1/4 cups sugar
- 1 3/4 cups butter
- 5 cups heavy cream
- 1 lb macadamia nut bits
- 4 baked 8-inch pie crusts
- 12 oz bittersweet chocolate, chopped
- 2 tablespoons sugar
