Chocolate Mint Cake Squares

Ingredients:

Chocolate Mint Cake Squares

  • 4 squares (1 oz size) unsweetened chocolate
  • 1/2 cup butter
  • 2 eggs
  • 1 cup sugar
  • 1/4 cup flour
  • Dash of salt
  • 1/2 cup chopped nuts
  • 2 tablespoons butter
  • 1 cup powdered sugar
  • 1 tablespoon cream
  • 1 teaspoon peppermint extract
  • Green food coloring
  • 2 teaspoons butter

Directions:

  1. Preheat electric oven to 350°F.
  2. Grease a 9-inch square baking pan.
  3. In a medium microwave-safe bowl or a saucepan, melt 2 squares of the chocolate and the 1/2 cup butter.
  4. In a small bowl, beat eggs and sugar; add to chocolate mixture.
  5. Stir in flour, salt, and nuts; mix well.
  6. Pour in prepared pan and bake for 15 to 20 minutes.
  7. In a small bowl, beat eggs and sugar; add to chocolate mixture.
  8. Stir in flour, salt, and nuts; mix well.
  9. Pour in prepared pan and bake for 15 to 20 minutes.
  10. Cool.
  11. In a small bowl, cream the 2 tablespoons butter and powdered sugar.
  12. Add the 1 tablespoon cream, peppermint, and a drop of food coloring.
  13. Spread over cooled cake; chill until firm.
  14. In small microwave safe bowl or saucepan, melt the remaining 2 squares of chocolate and the 2 teaspoons butter.
  15. Drizzle or spread over frosting and chill until firm.
  16. To serve, cut into tiny squares.

Makes about 24 servings.
