Classic Candied Sweet Potatoes

Ingredients:

Classic Candied Sweet Potatoes

  • 6 medium sweet potatoes or yams (2 pounds)
  • 1/2 cup packed brown sugar
  • 3 tablespoons butter
  • 3 tablespoons heavy cream
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt

Directions:

  1. Heat oven to 350°F.
  2. Scrub sweet potatoes, but do not peel.
  3. Place potatoes in saucepan.
  4. Add enough water just to cover potatoes.
  5. Heat to boiling; reduce heat to low.
  6. Cover and simmer 15 - 20 minutes or until tender.
  7. Drain; cool slightly.
  8. Peel off skins.
  9. Cut into 1/2-inch slices.
  10. Heat remaining ingredients in skillet over medium heat, stirring constantly, until smooth and bubbly.
  11. Add potatoes.
  12. Gently stir until glazed and hot.
  13. Transfer to casserole dish and top with marshmallows.
  14. Bake 5-10 minutes or until nicely browned on top.
