Cocoa Mochi

Ingredients:

Cocoa Mochi

  • 2 cups mochiko (Japanese sweet rice flour)
  • 1 3/4 cups sugar
  • 3 tablespoons ground cocoa
  • 1 tablespoon baking soda
  • 1 can (12 oz) evaporated milk
  • 1 can (12 oz) frozen coconut milk, thawed
  • 1/4 cup butter, melted
  • 2 eggs

Directions:

  1. Preheat electric oven to 350°F.
  2. Grease a 13 x 9 x 2-inch pan.
  3. In large bowl of electric mixer, combine all ingredients and mix well.
  4. Pour into prepared pan.
  5. Bake for 1 hour.
  6. Cool before cutting.

Makes 24 servings.
