- In medium sauté pan, over medium-high, heat 1 tablespoon of oil.
- Saute garlic, ginger, and shiitake mushrooms for 3-5 minutes.
- Remove from heat and combine with next 8 ingredients, in large mixing bowl.
- In separate bowl, whisk together remaining ingredients including remaining olive oil.
- Drizzle over rice mixture and toss to combine.
- Cover and chill for one hour before serving.
