Creamed Onion Gratin

Ingredients:

Creamed Onion Gratin

  • 2 medium sweet onions, cored and quartered lengthwise
  • 1/4 cup olive oil
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 1 cup heavy cream
  • Freshly grated nutmeg, to taste
  • 1/2 cup finely grated parmesan
  • 3 ounces gorgonzola cheese, crumbled
  • 1/4 teaspoon paprika

Directions:

  1. Heat oven to 350°F.
  2. In a 9-by-11- inch baking dish, toss onions with oil and season with salt and pepper.
  3. Bake, stirring occasionally, until soft and lightly browned, about 1 hour; set aside.
  4. Heat oven to broil.
  5. In a 2 quart saucepan over medium-high heat, melt butter.
  6. Add flour, and cook, stirring, until smooth, about 1 minute.
  7. Add cream and cook, stirring, until thickened, about 5 minutes.
  8. Season sauce with salt, pepper, and nutmeg.
  9. Pour sauce evenly over onions.
  10. Spread parmesan and gorgonzola cheese, and sprinkle with paprika; broil until cheese is melted and golden brown on top, about 2 minutes.

Serves 8.

Tip: To avoid eye irritation or "crying" when peeling onions, chill the onions prior to cutting, then cut them under running water.
