- 4 cups kale, stems removed and finely chopped
- 1 small red onion, thinly sliced
- 1/4 cup orange juice
- 1/4 cup extra virgin olive oil
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons orange zest
- 1/2 cup chopped and toasted macadamia nuts
- 3 ounces shaved Pecorino Romano cheese (Italian cheese made from sheep milk) or favorite hard salty cheese
