Crispy Rosemary Chicken and Crispy Wedge Fries

Ingredients:

Crispy Rosemary Chicken and Crispy Wedge Fries

  • 8 chicken thighs
  • 6 small red potatoes, quartered lengthwise
  • 1/2 cup olive oil
  • 1 tablespoon chopped fresh rosemary
  • 1 1/2 teaspoons chopped fresh oregano
  • 1 1/2 teaspoons garlic powder
  • Salt and pepper to taste

Directions:

  1. Heat oven to 375°F.
  2. Place chicken and potatoes in a bowl, pour olive oil over, and stir to coat.
  3. Scatter the chicken and potatoes onto a large baking dish, or cookie sheet with sides.
  4. Sprinkle with rosemary, oregano, garlic and salt and pepper.
  5. Bake for 1 hour, uncovered.
  6. Baste during last 15 minutes, for extra crispness.

Serves 8.
