- Heat oven to 375°F.
- Place chicken and potatoes in a bowl, pour olive oil over, and stir to coat.
- Scatter the chicken and potatoes onto a large baking dish, or cookie sheet with sides.
- Sprinkle with rosemary, oregano, garlic and salt and pepper.
- Bake for 1 hour, uncovered.
- Baste during last 15 minutes, for extra crispness.
