Double Apple Delight

Ingredients:

Double Apple Delight

  • 5 cups thinly sliced unpared apples (4 to 5 apples)
  • 1 cup fresh cranberries
  • 2 tablespoons raisins
  • 1 teaspoon ground cinnamon
  • 2 cups unsweetened applesauce
  • 2 tablespoons quick-cooking minute tapioca
  • 3 tablespoons pure maple syrup

Directions:

  1. Preheat electric oven to 350°F.
  2. Place apple slices in the bottom of a 9 x 9-inch baking pan.
  3. Top with cranberries and raisins; sprinkle with cinnamon.
  4. Combine remaining ingredients; spread over fruit mixture.
  5. Cover with foil and bake for 30 minutes.
  6. Serve warm or cold.

Makes 6 to 8 servings.

Note: Cherries, strawberries, blueberries, blackberries, or raspberries can be used in place of the cranberries. Dried cherries, apricots, or other dried fruits can be used in place of raisins.
