Easy Lettuce Wraps

Ingredients:

Easy Lettuce Wraps

Filling:

  • 4 ounces packaged long rice
  • 2 boneless, skinless chicken breasts, diced
  • Salt and pepper to taste
  • 3 to 4 cloves garlic, minced
  • 5 ounces bean sprouts
  • 1 egg, beaten
  • 10 ounces firm tofu, diced
  • 1/3 cup (about 2 ounces) chopped peanuts
  • 1/2 cup Special Sauce (recipe follows)
  • 1 head butter lettuce, or any leaf lettuce

Special Sauce:

  • 1 bottle (12 to 16 ounces) creamy French dressing
  • 2-inch piece fresh ginger, peeled and sliced
  • 1 tablespoon fish sauce (Patis)

Directions:

Filling:

  1. Soak long rice in warm water until softened.
  2. Drain; cut into smaller pieces.
  3. Season chicken with salt and pepper.
  4. Saute on medium heat until half-cooked; add garlic.
  5. Mix in long rice and bean sprouts.
  6. Make a well in the center and scramble egg in it.
  7. Mix in tofu, peanuts, and the 1/2 cup of Special Sauce.
  8. To serve, wrap a spoonful of the filling in a lettuce leaf.
  9. Add more Special Sauce if desired.

Makes about 10 appetizer servings.

Special Sauce:

  1. Blend sauce ingredients until smooth.

Makes about 1 3/4 cups (when made with a 16 ounce bottle of French dressing).
