Easy Tofu Salad

Ingredients:

Easy Tofu Salad

  • 1 block firm tofu, drained and cut into 1/4-inch cubes
  • 1 can (1-pound) salmon, drained and flaked
  • 1 large tomato, diced
  • 1 small white onion, chopped
  • 1 package (12-ounces) fresh bean sprouts
  • 1 bunch watercress, cut into 1 1/2-inch pieces
  • 1/4 cup chopped green onion
  • 2 tablespoons vegetable oil
  • 1 clove garlic, peeled and minced
  • 1/2 cup low-sodium soy sauce

Directions:

  1. On a large platter, layer tofu, salmon, tomato, onion, bean sprouts, watercress and green onion.
  2. Combine remaining ingredients; pour over salad; serve immediately.

Makes 8 servings.
