Eileen's Banana Nut Bread

Ingredients:

Eileen's Banana Nut Bread

  • 1 1/2 cups sugar
  • 3/4 cup vegetable oil
  • 4 eggs
  • 1 package (3.4 ounces) vanilla instant pudding
  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 teaspoons baking soda
  • 3 cups mashed bananas
  • 1 1/2 cups chopped nuts

Directions:

  1. Preheat oven to 350°F.
  2. Spray 3 small loaf pans with cooking spray.
  3. Combine sugar, oil and eggs; mix well.
  4. Add remaining ingredients.
  5. Pour mixture into loaf pans.
  6. Bake for 55 minutes.

Makes 12 servings.
