Fall Pumpkin Spice Cookies with Cream Cheese Icing

Ingredients:

Fall Pumpkin Spice Cookies with Cream Cheese Icing

  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • 3/4 cup local unsalted butter (available at farmers' markets and specialty stores)
  • 1 teaspoon vanilla
  • 1 cup canned pumpkin
  • 2 local eggs
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon salt

Icing:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla
  • 4 cups powdered sugar
  • 2-4 tablespoons fresh local milk

Directions:

  1. Preheat to 375° F.
  2. In a large bowl, mix sugars, butter and vanilla.
  3. Add pumpkin and eggs.
  4. Slowly mix in flour, baking soda, salt and spices until dough is sticky.
  5. Drop by large tablespoons onto baking sheet.
  6. Bake 10-12 minutes until golden brown; cool completely.
  7. In a medium bowl, mix cream cheese, butter, and vanilla until smooth.
  8. Add sugar, then milk until desired consistency.
  9. Drizzle icing over cookies.

Makes 48 cookies.
