Freezing Mangoes

Ingredients:

Freezing Mangoes

  • Mangoes

Directions:

  1. Pare and slice mangoes.
  2. Pack with sugar or syrup to retain flavor and texture.
  3. For sugar pack, use 1 tablespoon sugar for each cup of mangoes.
  4. Sprinkle sugar over mangoes and mix gently.
  5. Put into moisture-vapor-proof containers or plastic freezer bags.
  6. Mangoes may be frozen up to 6 months in a sugar pack.
  7. For longer storage, pack in syrup.
  8. Use 1/2 to 1 cup sugar for 2 cups water.
  9. Bring water to a boil and add sugar, stirring until sugar is dissolved; cool.
  10. Put mango slices into containers; cover with syrup.
  11. Allow 1-inch headspace at top of containers for expansion during freezing.

Tip: freeze fruit in 2-cup or 4-cup portions, as most recipes will call for 2 cups or 4 cups of fruit.
