- Pare and slice mangoes.
- Pack with sugar or syrup to retain flavor and texture.
- For sugar pack, use 1 tablespoon sugar for each cup of mangoes.
- Sprinkle sugar over mangoes and mix gently.
- Put into moisture-vapor-proof containers or plastic freezer bags.
- Mangoes may be frozen up to 6 months in a sugar pack.
- For longer storage, pack in syrup.
- Use 1/2 to 1 cup sugar for 2 cups water.
- Bring water to a boil and add sugar, stirring until sugar is dissolved; cool.
- Put mango slices into containers; cover with syrup.
- Allow 1-inch headspace at top of containers for expansion during freezing.
Tip: freeze fruit in 2-cup or 4-cup portions, as most recipes will call for 2 cups or 4 cups of fruit.
