- Preheat oven to 350°F.
- Spray a 13 x 9-inch baking pan with cooking spray.
- In a large mixing bowl, combine molasses, sugar, and oil.
- In a separate bowl, sift together flour, cinnamon, cloves and pepper.
- In a measuring cup, add baking soda to boiling water and stir to dissolve; add to molasses mixture.
- Mix in ginger and stir in dry ingredients.
- Add eggs and beat thoroughly.
- Pour into prepared baking pan.
- Bake for 35 minutes or until a cake tester comes out clean.
- Cool 30 minutes and cut into squares.
- Sprinkle with powdered sugar if desired.
