Fresh Green Beans and Bell Peppers

Ingredients:

Fresh Green Beans and Bell Peppers

  • 2 tablespoons olive oil
  • 1 pound fresh green beans, trimmed
  • 1 red bell pepper, cut into thin strips
  • 3 shallots, sliced
  • 2 garlic cloves, minced
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon ground red pepper

Directions:

  1. Heat oil in medium pan.
  2. Add green beans, bell pepper, and remaining ingredients and sauté over medium-high heat; toss to coat.
  3. Add 1/4 cup water.
  4. Cook, covered, 4 to 6 minutes; uncover and cook, stirring often, 1 to 2 more minutes or until water is evaporated and beans are crisp-tender.

Makes 8 servings.
