Fresh Hamakua Tomato and Kahuku Corn Salad

Ingredients:

Fresh Hamakua Tomato and Kahuku Corn Salad

  • 4 ears fresh Kahuku corn, with kernels cut off (about 4 cups)
  • 2 cups ripe Hamakua tomatoes, chopped
  • 1/4 cup black olives, chopped
  • 1/4 cup thinly sliced Maui onions
  • 1/2 cup fresh basil, julienne
  • 1 garlic clove, pressed
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon white balsamic or rice vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups Manoa or green leaf lettuce, torn into bite-size pieces

Directions:

  1. In a large bowl, toss all ingredients and let sit for 1 hour to allow flavors to develop and absorb into the vegetables.

Makes 4 servings.

Tip: Fresh, locally-grown tomatoes are full of flavor and taste sweet and juicy, not watery like the tomatoes that are picked green and ripened in containers en route to Hawaii. Tomatoes are best kept in a cool place at room temperature, not refrigerated.
