Fresh Pear Cobbler

Ingredients:

Fresh Pear Cobbler

  • 3 tablespoons butter, melted and divided (as noted below)
  • 6 very ripe Bartlett or Anjou pears, peeled, cored, and halved lengthwise (about 2 1/4 pounds)
  • 1 cup all-purpose flour
  • 1 cup sugar, divided (as noted below)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup reduced-fat milk
  • 1/4 cup apple juice
  • 1 teaspoon vanilla
  • 2 tablespoons brown sugar
  • 2 teaspoons lemon zest

Directions:

  1. Preheat electric oven to 400°F.
  2. Drizzle 1 ½ tablespoon of butter on the bottom of a 13 x 9-inch baking dish.
  3. Arrange pears in baking dish, cut sides down, over the butter.
  4. Combine flour, 1/2 cup sugar, baking powder, and salt in a small bowl.
  5. Add 1 1/2 tablespoons butter, milk, apple juice, and vanilla, and stir until well-blended.
  6. Spoon the batter around the pear halves.
  7. Combine 1/2 cup sugar, brown sugar, and lemon zest; sprinkle over pears.
  8. Bake at 400°F for 30 minutes or until bubbly.

Makes 12 servings.
