Fresh Pear Cobbler
- 3 tablespoons butter, melted and divided (as noted below)
- 6 very ripe Bartlett or Anjou pears, peeled, cored, and halved lengthwise (about 2 1/4 pounds)
- 1 cup all-purpose flour
- 1 cup sugar, divided (as noted below)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup reduced-fat milk
- 1/4 cup apple juice
- 1 teaspoon vanilla
- 2 tablespoons brown sugar
- 2 teaspoons lemon zest
