Ingredients:

Frozen Banana Bliss

  • 15 vanilla wafers (round cookie variety)
  • 2 large bananas
  • 1/4 cup peanut butter
  • 1/2 cup chocolate chips
  • 2-4 tablespoons milk
  • 1/4 cup chopped peanuts

Directions:

  1. Line a cookie sheet with parchment paper.
  2. Place wafers flat side down onto the paper, leaving space between each wafer.
  3. Slice bananas into coins about 1/2-3/4 inch thick.
  4. Spread a little dollop of peanut butter on top each wafer and place a slice of banana on top, pressing slightly.
  5. In a small bowl, combine the chocolate chips and milk.
  6. Microwave in 15 second increments, stirring in between until chocolate chips are melted.
  7. The chocolate should be thick enough to coat the bananas.
  8. Add more milk if necessary.
  9. Carefully pick up wafer and banana and dip into the chocolate banana side down.
  10. The wafer does not have to be fully covered in chocolate.
  11. Carefully place each wafer on the parchment paper.
  12. The chocolate should drip down from the banana and cover the wafer.
  13. Sprinkle with peanuts and freeze until completely frozen about 3-5 hours.
  14. Serve immediately or remove frozen treat from the cookie sheet and store in a freezer safe container.

Makes 15 servings.
