Fruit Cake Bars

Ingredients:

Fruit Cake Bars

  • 2 1/2 cups flour
  • 1/2 cup powdered sugar
  • 1 cup butter or margarine
  • 1 1/3 cups sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 eggs, beaten
  • 1 cup chopped candied fruit
  • 1 cup chopped nuts
  • Powdered sugar

Directions:

  1. Preheat electric oven to 350°F.
  2. Mix 2 cups of the flour and the powdered sugar.
  3. Cut in butter until crumbly.
  4. Press into a 13 x 9 x 2-inch pan.
  5. Bake for 15 minutes.
  6. In a large bowl, sift the remaining 1/2 cup flour with the sugar, baking soda, and salt.
  7. Add eggs, candied fruit, and nuts; mix well.
  8. Spread batter over crust.
  9. Bake for 35 more minutes.
  10. Cool.
  11. Sprinkle with powdered sugar; cut into bars.

Makes 36 bars.
