Fuji Apple Salad

Ingredients:

Fuji Apple Salad

  • 1/2 cup sugar
  • 1 (3 ounce) package lemon gelatin
  • 2 envelopes unflavored gelatin
  • 2 1/2 cups hot water
  • 3 Fuji apples, peeled and diced
  • 1 (8 ounce) can crushed pineapple (undrained)
  • 1 package (8 ounces) cream cheese, softened (do not use reduced-fat or no-fat cream cheese)
  • 1 cup heavy cream or whipping cream

Directions:

  1. Mix together sugar, lemon gelatin, unflavored gelatin, and hot water; place in refrigerator.
  2. Mix apples with pineapple.
  3. In a large bowl, blend cream cheese with heavy cream.
  4. Add apple mixture and gelatin mixture.
  5. Pour into a 13 x 9 x 2-inch pan and chill until firm.

Makes 24 servings.
