Fukuda's Shiitake Crusted Fresh Fish with Sake-Wasabi Buerre Blanc
- 1/2 cup chopped dried and soaked, or fresh shiitake mushrooms (stems included), whole or pieces
- 1/2 cup chopped fresh basil
- 2 cups panko (Japanese bread crumbs)
- 6 (6 ounce size) fresh fish fillets (such as mahi mahi)
- Salt
- Freshly ground black pepper
- 1/2 cup mayonnaise
- 2 teaspoons Sriracha (Thai garlic-chile paste)
- About 3 tablespoons olive oil for sautéing
Sake-Wasabi Buerre Blanc:
- 1 cup sake
- 1/2 cup sour cream
- 2/3 cup salted butter
- 1 tablespoon wasabi (Japanese horseradish) paste
- 1 teaspoon shoyu or more, if desired
- Salt and pepper to taste (optional)
