- 1 tablespoon olive oil
- 4 boneless skinless chicken breast halves
- 1 bunch green onion, chopped
- 1 1/2 cups chopped fresh tomatoes
- 1/4 cup water
- 2 cloves garlic, minced
- 1/2 teaspoon salt or to taste
- 2 teaspoons garam masala, divided
Garam Masala Chicken

Directions:
- Heat oil in skillet on medium-high heat.
- Add chicken and cook for 3 minutes or until lightly browned.
- Turn chicken.
- Add green onions; stir.
- Cook 2 minutes longer.
- Stir in tomatoes, garlic and water.
- Sprinkle salt and 1 1/2 teaspoons of garam masala over chicken and vegetables.
- Bring to boil.
- Reduce heat, cover and simmer 10 minutes, stirring occasionally or until chicken and vegetables are tender.
- Stir remaining 1/2 teaspoon garam masala into skillet.
- Bring to a boil.
- Reduce heat.
- Cook 5 minutes longer, stirring occasionally.
Serves 4.
