Garam Masala Chicken

Garam Masala Chicken

Ingredients:

  • 1 tablespoon olive oil
  • 4 boneless skinless chicken breast halves
  • 1 bunch green onion, chopped
  • 1 1/2 cups chopped fresh tomatoes
  • 1/4 cup water
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt or to taste
  • 2 teaspoons garam masala, divided

Directions:

  1. Heat oil in skillet on medium-high heat.
  2. Add chicken and cook for 3 minutes or until lightly browned.
  3. Turn chicken.
  4. Add green onions; stir.
  5. Cook 2 minutes longer.
  6. Stir in tomatoes, garlic and water.
  7. Sprinkle salt and 1 1/2 teaspoons of garam masala over chicken and vegetables.
  8. Bring to boil.
  9. Reduce heat, cover and simmer 10 minutes, stirring occasionally or until chicken and vegetables are tender.
  10. Stir remaining 1/2 teaspoon garam masala into skillet.
  11. Bring to a boil.
  12. Reduce heat.
  13. Cook 5 minutes longer, stirring occasionally.

Serves 4.
