Garlic-Flavored Mashed Potatoes

Ingredients:

Garlic-Flavored Mashed Potatoes

  • 1 bulb garlic
  • 1 teaspoon olive oil
  • 6 baking potatoes
  • 2 tablespoons butter or margarine
  • 2 tablespoons chopped rosemary leaves
  • Salt and pepper to taste
  • 1 to 1 1/2 cups reduced-salt chicken or vegetable broth
  • 1/2 cup Parmesan cheese

Directions:

  1. Keeping cloves intact, cut 1-inch off the top of garlic bulb.
  2. Sprinkle oil over garlic.
  3. Loosely wrap with foil and bake in electric oven at 350°F for 1 hour.
  4. Squeeze garlic from skins; discard skins.
  5. Cook potatoes until tender; drain and pare.
  6. Mash while hot.
  7. Add garlic and butter; mix until butter melts.
  8. Add rosemary, salt, pepper.
  9. Stir in broth, a little at a time; beat until smooth and fluffy, adding broth as needed.
  10. Stir in Parmesan cheese.

Makes 8 servings.
