Gelatin-Filled Papayas

Ingredients:

Gelatin-Filled Papayas

  • 2 small to medium-size firm ripe papayas
  • 1 pkg (3 oz) flavored gelatin
  • 1 cup boiling water
  • 1/4 cup lime or lemon juice
  • 1/4 cup ice water

Directions:

  1. Pare papayas; cut off stem ends to expose seeds.
  2. Carefully remove seeds with a teaspoon; chill papayas until ready to fill.
  3. Combine gelatin and boiling water; stir until dissolved.
  4. Add lime juice and ice water; chill until mixture starts to thicken.
  5. Pour or spoon gelatin into papayas and chill overnight.
  6. To serve, carefully cut papayas into desired shapes, such as wedges, halves, or slices.
  7. Serve as a dessert or salad.

Makes 4 to 6 servings.
