Glazed Tofu Meat Loaf

Ingredients:

Glazed Tofu Meat Loaf

  • 1 block (20 ounces) firm tofu, drained
  • 2 pounds ground beef or poultry
  • 1 envelope (1 3/8 ounces) onion soup mix
  • 2 eggs
  • 1/4 cup minced green, red, orange, or yellow pepper
  • 1/2 cup dry bread crumbs
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 1 teaspoon prepared mustard

Directions:

  1. In large bowl, mix tofu, meat, soup mix, eggs, pepper, bread crumbs and salt.
  2. Press into a 9-inch round casserole; bake at 350°F for 30 minutes.
  3. In a saucepan, combine sugar, soy sauce and mustard; cook over low heat until sugar is dissolved.
  4. Pour over loaf; bake 15 more minutes.

Makes 8 servings.
