Haupia Delight

Ingredients:

Haupia Delight

  • 1 cup butter
  • 1 cup sugar, divided as noted below
  • 2 cups flour
  • 1/2 cup chopped nuts
  • 1/2 cup cornstarch
  • 3 cups water
  • 1 (12 ounce) can frozen coconut milk, thawed
  • 1 (8 ounce) container frozen whipped cream
  • 1/2 cup shredded coconut

Directions:

  1. Preheat oven to 325°F.
  2. Cream butter with 1/3 cup sugar.
  3. Mix in flour and nuts.
  4. Press evenly into a 9 x 13 x 2-inch pan.
  5. Bake for 15 -18 minutes.
  6. Combine cornstarch, water, coconut milk, and remaining sugar in a sauce pan.
  7. Cook over low heat, stirring constantly until thickened.
  8. Cool and pour over crust; chill.
  9. Cover with whipped cream and sprinkle with coconut.

Makes 18 servings.
