Hazelnut Molten Lava Cake

Ingredients:

Hazelnut Molten Lava Cake

  • 6 ounces bittersweet chocolate
  • 4 tablespoons hazelnut spread, divided as noted
  • 6 tablespoons flour
  • 11 tablespoons unsalted butter
  • 3 whole eggs, plus 3 additional egg yolks
  • 1/4 cup sugar, plus 2 additional tablespoons
  • 1/4 cup chopped hazelnuts
  • Strawberries, chopped (optional)
  • Whipped cream (optional)

Directions:

  1. Preheat oven to 350°F.
  2. Generously grease small ramekins with non-stick spray and place them on a baking pan.
  3. Melt butter and chocolate; stirring frequently.
  4. With an electric mixer, whisk eggs and sugar on medium-high speed until eggs become light and thick (about 8-9 minutes).
  5. Add flour and mix together.
  6. Slowly pour the chocolate mixture into the egg mixture, mixing on low speed until well combined and the batter becomes glossy (about 5-6 minutes).
  7. Fill each ramekin halfway; spoon 1 tablespoon of hazelnut spread into each.
  8. Ladle remainder of batter into each ramekin; do not overfill.
  9. Bake for 10-14 minutes until outside is solid and top appears to be soft, but is not jiggly.
  10. Carefully remove from oven; place a plate on top of each ramekin and quickly invert it.
  11. Remove the ramekin; cake should easily fall out.
  12. Garnish with nuts and strawberries; serve immediately.

Recipe makes 4 servings.
