- Grease large cookie sheet with non stick cooking spray.
- In a large bowl, combine the oats, flour, baking soda, cinnamon, and salt.
- In a medium bowl, whisk together the brown sugar, oil, egg whites, and vanilla extract until smooth.
- Fold in the cranberries, walnuts, and chocolate chips.
- Gradually fold in the flour mixture and stir until everything is incorporated.
- Drop the batter by tablespoons onto cookie sheet.
- Bake for 10 minutes or until the cookies are golden brown.
- Transfer the cookies to a wire rack to cool completely.
