Hearty Chocolate Chip Cranberry Walnut Cookies

Ingredients:

Hearty Chocolate Chip Cranberry Walnut Cookies

  • 2 cups rolled oats
  • 1/2 cup whole wheat flour (or all-purpose flour)
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup light brown sugar
  • 1/3 cup canola oil
  • 3 large egg whites
  • 2 teaspoons vanilla extract
  • 3/4 cup dried cranberries, coarsely chopped
  • 2 1/4 cups walnuts, chopped
  • 1/2 cup semisweet chocolate chips

Directions:

  1. Preheat the electric oven to 350°F.
  2. Grease large cookie sheet with non stick cooking spray.
  3. In a large bowl, combine the oats, flour, baking soda, cinnamon, and salt.
  4. In a medium bowl, whisk together the brown sugar, oil, egg whites, and vanilla extract until smooth.
  5. Fold in the cranberries, walnuts, and chocolate chips.
  6. Gradually fold in the flour mixture and stir until everything is incorporated.
  7. Drop the batter by tablespoons onto cookie sheet.
  8. Bake for 10 minutes or until the cookies are golden brown.
  9. Transfer the cookies to a wire rack to cool completely.

Makes 3 dozen cookies.
