Hearty Minestrone Soup

Ingredients:

Hearty Minestrone Soup

  • 6 cups water
  • 2 cups shredded cabbage
  • 2 cups diced potatoes
  • 1 can (16 ounces) stewed tomatoes
  • 2 stalks diced celery
  • 1 cup uncooked macaroni
  • 1 chopped onion
  • 2 diced carrots
  • Slightly less than 1/4 cup liquid amino
  • 3 tablespoons chopped Italian parsley
  • 3/4 teaspoon Italian seasoning
  • 1/2 teaspoon marjoram
  • 1/2 teaspoon crushed rosemary, dried or fresh
  • Salt to taste
  • 1 can (15 ounces) kidney beans including liquid
  • 1 cup frozen peas

Directions:

  1. In a large soup pot, combine all ingredients except for the kidney beans and peas.
  2. Bring to a boil.
  3. Reduce heat and simmer for 40 minutes.
  4. Add kidney beans with liquid and peas.
  5. Simmer for an additional 10-15 minutes.

Makes 10 servings.
